Une pure gourmandise


Ces petites flammes au chocolat sont une drogue absolue, aucun addict du chocolat ne pourra y résister. Je les aient goûté dans le nord de l’Italie cet été et j’ai été conquise. Il fallait donc que je le partage avec vous. Les “Fiamme di Cioccolato”, de leur nom d’origine, sont simples a réaliser, une base biscuit sur laquelle on dépose une généreuse ganache chocolat noisette que l’on enrobe ensuite de chocolat fondu. Vous l’aurez compris c’est très gourmand!

Comme je congèle toujours les restes de pâte à biscuit que je peux avoir j’en ai fait avec des palets bretons noisette et de la pâte sucrée au citron, vous pourrez adapter avec presque n’importe quel biscuit de votre choix.

Pour la ganache je l’ai additionnée de noisettes torréfiés en poudre et de praliné.

Prévoyez en beaucoup car ça disparait plus vite qu’il ne le faut pour le dire !

 

 

 

 

Pour environ 30 flammes

Le biscuit:

500g de pâte à biscuit de votre choix

J’ai utilisé un palet breton à la noisette et zestes de citron.


 

 

°Recette du palet breton ici, remplacez la poudre d’amande par de la poudre de noisette. Ou si vous préférez le biscuit au citron utilisez la pâte sucrée amande citron ici.


° Si vous utilisez une pâte à biscuit qui gonfle ou s’étale à la cuisson, comme le palet breton (la pâte contient de la levure) :

étalez la pâte en un rectangle de maximum 5mm d’épaisseur, cuire à 180C jusqu’à ce que les bords commencent à dorer puis dès la sortir du four découpez des disques à l’iade d’un emporte pièce. Manipulez avec précaution car tant que c’est encore chaud c’est assez fragile. Laissez refroidir.


° Vous pouvez utiliser une pâte sucrée ou brisée comme pour les fonds de tartes. Dans ce cas découpez les disques avant cuisson, disposez sur une feuille de cuisson et laissez 15 min frais. Cuire à 180 °C environ 10 minutes et laissez refroidir.

 

La ganache

250g de crème liquide entière

200g de chocolat noir ou au lait

95g de noisette torréfiée en poudre

50g de praliné ou purée de noisette

2 càs d’amaretto, whisky ou rhum

 

L’enrobage

300g de chocolat (noir, au lait ou autre)

° Préparez la ganache, portez la crème à ébullition, hors du feu ajoutez le chocolat en petits morceaux et mélangez au fouet.

° Lorsqu’il est fondu ajoutez le praliné puis la poudre de noisette et l’amaretto. Mélangez bien laissez prendre au frais entre 30 et 45 minutes, elle doit avoir une texture assez fondante pour être dressée à la poche à douille mais pas trop dure non plus sinon ce sera difficile à passer.

°Si vous l’avez oubliée au frigo  remplir la poche à douille et la malaxer, ça réchauffera doucement l’ensemble de la ganache pour qu’elle puisse passer facilement.


° Ganache montée: Si vous voulez obtenir une texture un peu plus fondante vous pouvez faire une ganache montée. Dans ce cas laissez la ganache au frais pendant environ 2h, elle doit avoir complètement pris, il faut ensuite la battre pour la monter, comme une chantilly, au batteur à main ou dans la cuve du robot avec le fouet.

Assemblage:


° Dressez la ganache sur les biscuits et mettre au frais au moins 30 minutes, au mieux les mettre au congélateur.

° Faire fondre le chocolat au bain marie, trempez les flammes dedans, secouez pour dégager le surplus et laissez figer.

Variations:

° Vous pouvez adapter cette recette à vos goûts en utilisant différentes pâtes à biscuits, cookies, sablé…

° Vous pouvez remplacer la noisette par de l’amande, noix ou noix de pécan réduite en poudre.

° On trouve des chocolats de toutes sortes en magasin donc la aussi vous pouvez choisir pour la ganache ou l’enrobage.

° On peut aussi ajouter des zestes d’agrumes à la ganache pour donner un peu de fraîcheur et de légèreté à l’ensemble.

A treat for chocolate addicts

These little chocolate flames are an absolute drug, chocolate addict’s can’t help themselves. I have tasted it in northern Italy this summer and I was conquered. So I had to share it with you. The Fiamme di Cioccolato, their original name, are simple to make, a biscuit base on which is laid a generous hazelnut chocolate ganache which is then coated with melted chocolate. You guessed this is very greedy!

As I always freeze the  leftovers of biscuit dough so I made the flames with hazelnut biscuits and sweet pastry with lemon, you can adapt with almost any cookie / biscuit of your choice. For the ganache I added roasted hazelnut powder and praline. Make a big batch of it because it disappears faster than it takes to say it!

 

 

 

 

For about 30 flames

The biscuit:

500g biscuit dough of your choice 

I used a sanded hazelnut biscuit and a sweet lemon zest’s crust.

 

° Halzelnut sanded biscuit recipe here, just use hazelnut powder instead of almond powder. 

° If using a cookie dough that swells or spreads while cooking, such as the sanded hazelnut biscuit, (the dough contains yeast): roll out the dough into a rectangle up to 5mm thick, cooked at 180C until the edges begins to brown and as soon as it comes out of the oven cut out discs with a cookie cutter. Handle with care as long as it is still hot it is quite fragile. Let cool.

° You can use a any pie crust. In this case cut discs before cooking, place on a baking sheet and let cool 15 minutes. Bake at 180 °C for about 10 minutes and let cool.

 

Ganache

250g full cream

200g dark chocolate or milk

95g roasted hazelnut powder

50g praline and hazelnut puree

2 tablespoons amaretto, rum or whiskey

The coating

300g chocolate (dark, milk or other)


°Prepare the ganache, bring the cream to boil, remove from heat add the chocolate chopped into small pieces and whisk.

° When melted add the praline, the amaretto liquor and hazelnut powder. Stir well, then let set in the fridge between 30 and 45 minutes, it should have a fairly smooth texture to be drawn through the pastry bag but not too hard either or it will be difficult to get it through the pipe.

° If you have forgotten it in the fridge fill the pastry bag and knead, it will heat gently throughout the ganache to make it softer.


° Whipped up ganache:

If you want to get a little more airy texture you can make a whipped up ganache. In this case let the ganache cool for about 2 hours, it must have completely set, then just whip it up like a chantilly using an hand mixer or in the food processor using the whisk.

Assembly:

° Lay the ganache over the biscuits and chill at least 30 minutes, the best is to put them in the freezer.

° Melt the chocolate using a bain marie, soak the flames, shake to clear the surplus and let dry.

 

Variations:

° You can adapt this recipe to your taste by using different biscuits doughs, cookies, shortbread …

° You can replace the hazelnuts with almond, walnuts or pecan powder.

° There are all kinds of chocolates in stores so you can choose whatever you want for the ganache or coating.
