Meringue suisse/ Swiss meringue

Cette meringue est très souple à travailler, elle est parfait pour réaliser des coques à garnir ou encore des décorations comme des petits bonhommes de neige ou des champignons ou ce que vous voulez. Une fois cuite elle reste solide et sont coeur est fondant.

These meringue is perfect to be shaped, it’s the best to make shells to fill up or decorations like snow mens or mushroom or what ever you want. Once baked it is solid and soft inside.

 

70g de blancs d’œufs à température ambiante / 70g of eggs white at room temperature

140g de sucre en poudre / 140g of sugar

1 filet de jus de citron / 1 dribble of lemon juice

 

La meringue suisse, rien de plus simple, du blanc d’œuf auquel on ajoute le double de leurs poids en sucre, que l’on porte à tiédir et que l’on bat jusqu’à refroidissement.

Swiss meringue is simple, egg white to which is added twice their weight in white sugar, that is worn to cool and we beat until cool.

 

°Préparez une casserole d’eau bien chaude pour faire un bain-marie.

°Prepare a saucepan with very hot water to use as a « bain-marie ».

°Dans le bol du robot ou dans un cul de poule, mettre les blancs d’œufs, le jus de citron et le sucre, posez sur la casserole et fouettez les blancs de manière à répartir la chaleur de façon homogène. Pas besoin de fouetter comme un(e) hystérique, c’est juste pour que les blancs ne collent pas au fond du bol.

°In the bowl of the food processor, or in a big bowl, pour the egg’s whites, the lemon juice and sugar, put the bowl in the casserole and whisk in order to spread the heat in an homogeneous way. No need to beat like a mad person, it aims to avoid the egg white’s not to be stick on the bottom of the bowl.

°Cessez de fouettez quand le mélange atteint 45-50°C, sans thermomètre stopper lorsque les blancs sont devenus bien blancs, oui je sais ça fait bizarre de dire ça, une texture de nuage si vous préférez…

°Whisk until the mix is at 45-50°C, without a thermometer stop when the eggs whites are very white, I know it’s strange to tell it that way, it will looks like a cloud…

°Retirez du bain-marie et continuez à fouetter (avec le robot pâtissier ou au batteur électrique, pour les courageux à la main), jusqu’à ce que le mélange soit presque froid, légèrement tiède. La meringue sera bien brillante et formera un pic en enlevant le fouet.

°Take off the bain-marie and keep whisking (with the robot, electric whisk or by hand for the braves), until the mix get almost cold, just a little warm. The meringue will be shiny, and taking your whisk out of it peaks will be formed.

°Préchauffez le four à 100°C, placez un plat à gratin rempli d’eau bouillante dans le four. Ceci permettra à la meringue de garder son moelleux à cœur.

°Preheat the oven at 100°C, put dish filled with boiling water in the oven, it will allows the meringue to stay molten inside.

°Dressez la meringue à l’aide d’une poche à douille, enfournez environ 1h (ce temps dépendra de la taille de vos pièces) et laissez sécher au moins 30 minutes.

°Using a pastry bag, shape the meringue, put in the oven 1 hour (depending in the size of the pieces and let dry at least 30 minutes.
