Les croquettes de légumes il n’y a rien de plus simple, une purée et des légumes, en plus de ça on peut varier selon ses goûts et les saisons. On a vraiment adoré à la maison, j’en avait fait pour un régiment comme d’hab mais c’était tellement sympa que ça ne nous a pas dérangés d’en manger trois jours de suite.
There’s nothing as simple as veggie patties, mashed potatoes and veggies, besides we can vary season by season and to suit your tastes. We liked it a lot at home, as usual I made it for a big families even if we are just 2 and it didn’t bother us to eat veggies patties for 3 days because it was so yummy…
1 blanc de poireaux / 1 leak (the white part)
1 petit navet / 1 small turnip

Quelques feuilles de thym/ Some Thyme leaves
1 à 2 poignées de Comté rapé / 1 or 2 handful of Comté (french cheese, or cheddar)

2 oeufs et un filet de lait / 2 eggs and milk
Graines de sésame / sesame seeds
Homemade breadcrumbs:
°Take old bread, slice it, or use sliced bread, wheat bread or whole flour bread or even flour and seeds bread. Put in the oven at 200°C until golden. Mix in the blender.

The patties:
°Faire cuire les patates et topinambours avec le thym dans de l’eau salée pour ensuite les réduire en purée. Vous pourrez aussi essayer avec des patates douces si vous aimer ou n’utiliser que des pommes de terre.°Cook the potatoes and Jerusalem artichoke in water with thym and mashed it. You can also try with sweet potatoes or use potatoes only.
°Grate the leak (with the food processor), carrot, mushroom and turnip. Mince the onion, browned in a pan with olive oil and add the grated veggies, cook for 10 minutes to dry it.
°Mix the veggies with the mashed potatoes, add minced parsley, the 2 beaten eggs, add 1 to 2 handful of Comté (french cheese, or cheddar) seasonned and mix well, chill. The texture has to be thick, not liquid, if needed you can add corn flour.
°Once the mix cold, shape balls, dip in egg beaten with milk, then in breadcrumbs 2 to 3 times, then, if you like it, in sesame seeds for a nice result even more crunchy.
°Golden in a hot pan with olive oil, serve with a salad, and enjoy !
