Tiramisu abricot rhubarbe

Comme je vous le disait lorsque j’ai publié ma recette de tarte à l’abricot, les fruits étant assez acides et de mauvaise qualité le résultat était moyen. J’ai donc voulu essayer de “recycler” cette tarte afin d’en faire un dessert plus doux. Comme on trouve souvent des tiramisus à base de fruits et biscuits, j’en faisait d’ailleurs aux spéculoos et fruits rouges il y a quelques années,je me suis dit que ça devrait faire un bon mariage. 

Ce dessert a été testé et approuvé par plusieurs collègues et mon mari et je peux vous dire qu’ils ont aimé! La crème mascarpone apporte vraiment de la douceur à l’ensemble, on obtient un équilibre sucré et acide parfait, en plus cela reste très léger. Vous pourrez aussi l’essayer avec des speculoos à la place du biscuit noisette.

 Le fond de tarte sablé aux noisettes

Pour 5 personnes
50g de beurre (demi sel) mou 

25g de miel épais (doux, toutes fleurs ou acacia)

30g de jaunes d’oeufs

3g de levure chimique

50g de farine

40g de poudre de noisettes

2g de sel (si vous utilisez du beurre doux, sinon une pincée)

QS Extrait de vanille

°Commencez par mélangez à vitesse rapide, au fouet, le sucre, le miel et le beurre pour rendre le mélange mousseux. Puis ajoutez les jaunes d’œufs.

°Ajoutez la farine, la poudre de noisette , le sel, la levure et l’extrait de vanille.

°Remplacez le fouet par la feuille (à la main prenez une spatule), mélangez et stoppez dès que le mélange est homogène.

°Avec la corne bien racler le fond de la cuve pour être sûr que toute les matières sèches ont été mélangées.

°Faire une boule, filmez et laisser au frais au moins 30 minutes, ou au congélateur s’il fait chaud.

°Étalez, en rectangle, la pâte au rouleau sur un plan fariné, pas trop épais car ça va gonfler à la cuisson. Mettre sur une plaque recouverte d’un papier cuisson.

°On enfourne, four chaud à 170°C, environ 10 minutes.

°Laissez refroidir sur une grille et écrasez le en grosses miettes à l’aide d’un pilon.

°Vous pourrez les garder plusieurs jours dans une boîte hermétique.

Tiramisu  Façon tarte à l'abricot

La compotée de rhubarbe

125g de rhubarbe
5cl de jus de pommes 
1 càs de miel
0,5g d’agar agar

 

°Lavez, sécher, épluchez votre rhubarbe et couper la en petits tronçons.

°Mettre dans une casserole avec le miel et le jus de pomme (j’ai utilisé mon extracteur de jus mais vous pouvez utiliser du jus de pomme artisanal 100% pomme). Ajoutez l’agar agar et portez à ébullition.

°Laissez cuire à feux doux environ 20 minutes en mélangeant de temps en temps. Puis laissez refroidir. 

 

Les fruits

425g d’abricots bien mûrs mais fermes
Un filet d’huile d’olive
3 à 4 brins de romarin frais
1 gousse de vanille
Du miel

 

°Utilisez des abricots de bonne qualité, mûres mais fermes, surtout pas molles. Lavez les, séchez, découpez les en petits cubes.

°Chauffez la poêle, à feu moyen, versez un filet généreux d’huile d’olive, une à 2 cuillères à soupe de miel selon la teneur en sucre de vos fruits et les grains de la gousse de vanille.

°Poêlez les fruits coupés quelques minutes, les abricots doivent rester fermes et surtout pas finir en purée. À mi cuisson ajoutez le romarin ciselé finement et mélangez bien, poursuivre la cuisson, réservez, laissez refroidir complètement.

La crème au mascarpone

3 oeufs
100g de cassonade
250g de mascarpone
1 gousse de vanille

°Coupez la gousse en deux dans la longueur, grattez les graines et fouettez quelques minutes avec les jaunes d’oeufs et la cassonade afin de dissoudre un peu le sucre. Utilisez des œufs de bonne qualité, de poules heureuses, pour avoir une belle couleur du jaune, sinon votre tiramisu sera tout pâle.

°Ajoutez le mascarpone aux jaunes, puis montez les blancs en neige bien fermes.
°Incorporez délicatement, à la maryse et en plusieurs fois, les blancs à la préparation au mascarpone, arrêtez de mélanger dès que le mélange est homogène.

 

Tiramisu abricot rhubarbe

Sweet & acidulous, airy

As I told you when I published my recipe of the Apricot & rhubarb tart, the fruits were of bad quality and the result was too acidulous. So I wanted to “recycle” my tart in a sweeter dessert. I used to make red berries and speculoos tiramisus a few years ago, it’s also biscuit + fruits so I told myself why not trying this way ?!

 This dessert was tested and approved by a few colleagues and my husband and they really liked it! The creamy mascarpone add a sweet touch to the whole dessert and create a balance flavor sweet and acidulous. It’s also very light, perfect to close a long diner. You could also try it with speculoos biscuits instead of hazelnut biscuit.

 Sanded hazelnut biscuit

For 5 servings

50g of soft salted butter 

 25g of brown sugar 

25g of thick honey (mild, all flowers or accacia) 

 30g of egg yolk’s

 3g of baking powder 

  50g of flour 

  40g of hazelnut powder 

2g of salt (if you are using unsalted butter, or just a pinch) 

Vanilla extract

°Beat together at high speed, using a whisk, butter, honey and sugar until airy. Then add the egg yolks one by one.

°Add the flour, hazelnut powder, salt, baking powder and vanilla extract.

°Using the flat whisk (or a spatula), stir and stop as soon as the mix is homogenous.

°Scrap the bottom of the bowl to be sure that all the flour is incorporated.

°Shape a ball, wrap in plastic and chill for at least 30 minutes, if the weather is hot put in the freezer.

°Roll down the dough on a floured working surface, not too thick because it will swell while baking. Cut as a rectangle and lay on a baking sheet.

°Put in the oven at 170°C, about 10 minutes. 

°Let cool down completly on a wire rack and crush it in big crumbs.

°You can keep them several days in an hermetic box.

Tiramisu abricot rhubarbe

The rhubarb compote 

125g of rhubarb

5cl of apple juice

1 tbsp of honey

0,5g d’agar agar

° Wash, dry, peel and chopp the rhubarb in small pieces. 

° Put all the ingredients in a saucepan, (I used my juicer but you can use a 100% apple juice no sugar added), bring to boil.

° Allow to cook at medium heat about 20 more minutes, stir from time to time. Then let cool down completly.

 

Fruits

425g of ripe and firm apricots

 A dash of olive oil

3-4 leaves of fresh rosemarin

a bean of vanilla

Honey

°Use good quality apricots , ripe but firm, not soft. Wash, dry and chop them in 4 pieces.

°Heat the pan at medium heat, add a generous dash of olive oil, scratch vanilla bean and 1-2 tbsp of honey or more if needed.

°Stir fry the fruits a few minutes, it has to stay firm, not finish like a compote. At halfway through cooking add the finely dicced rosemary leaves, stir well, finish cooking and let cool down completely.

 

The mascarpone cream

3 eggs

100g of brown sugar

250g of mascarpone

 a bean of vanilla

°Cut the bean in two halves in the length, scratch out the seeds and beat them with the egg’s yolks and the sugar until the sugar begins to melt. Use high quality eggs, from happy chooks, so the yolks will be colored and the tiramisu won’t be white.

°Add the mascarpone to the yolks, then whippe up the egg’s whites firmly.

°Incorporate gently the egg whites’ to the mascarpone preparation, using a flexible spatula and in several time, stop to stir when the preparation is smooth.

Assembly:

°Using a spoon or a piping start by a layer or cream, then a layer of biscuit, rhubarb and apricot. Finish with a layer of cream. Chill at least 2 hours.
