Je vous présente mon 1er Paris Brest, qui a d’ailleurs eu beaucoup de succès !
Il y a longtemps que je voulais tester et j’ai aussi été titillée par celui de Philippe Conticini que je vois partout depuis un moment. Vous avez sans doute pu voir et revoir ce dessert repris des centaines de fois sur la blogoshpère culinaire, c’est en fait un Paris Brest un peu plus moderne et élégant, qui donne envie avec ses ces petits choux généreux…
This is my first Paris Brest, a pastry made with choux puff pastry, filled with praline cream; it had a lot of success!
There’s a long time I wanted to try one, I saw everywhere Philippe Conticini’s perfect Paris Brest and it get my obsessed. This dessert made by a well know French pastry master chef had already travel in the most of culinary blogs, that’s a modern and elegant version of this desert, that makes me crave
for it, with its generous little choux…
 
Nous avons été invités chez une amie que je n’avais pas vue depuis plusieurs années et c’était une
bonne occasion de ramener un bon dessert et donc une bonne occasion pour tenter celui-ci! En tout cas tout le monde s’est régalé !
Je me suis basée sur la recette du grand chef mais je l’ai modifiée, j’ai pris ma recette de pâte à
choux et ai préféré faire une crème diplomate plutôt qu’une mousseline car je la trouve plus légère.
We were invited for lunch by an old friend of mine, we didn’t see each other for a long time and it was a good opportunity to bring dessert and also a good opportunity to try this one! And everyone loved it!
I took the initial recipe from the Chef and I changed it, I used my own choux puff pastry recipe and made a “diplomat cream” instead of a “mousseline cream”, that I find lighter.
 
Bref c’est un dessert encore plus gourmand que l’original, avec son insert praline et sa crème légère
et généreuse. A consommer sans modération !
Anyway, that’s an even greedy dessert than the original one, with its praliné heart and its light and generous cream. To enjoy without liberation.

 

Crème diplomate au praliné 
« Diplomate » praliné cream
350g de lait entier / 350g of whole milk
1 œuf et 1 jaune / 1 egg and 1 yolk
30g de fécule de maïs / 30g cornstarch
90g de sucre / 90g sugar
Extrait de vanille  / Vanilla extract
6g de gélatine (ou 2 à 3 feuilles) ou 2g d’agar agar / 6g of gelatine or 2g of agar agar
100g de praliné / 100g of praliné
150g de crème liquide entière ou 30% / 150g of whole or 30% liquid cream

°Commencez par réaliser la crème diplomate au praliné. Elle est composée d’une crème pâtissière collée à la gélatine additionnée de crème montée.

°Start with the « diplomat cream », it’s composed of a pastry cream with gelatin at which you add whipped up cream.

°Faire ramollir la gélatine dans un grand volume d’eau froide. 
°Put the gelatin in a big volume of cold water.

°Portez le lait à ébullition,si vous utilisez de l’agar agar le mettre à ce moment la dans le lait, il doit bouillir au moins 30 secondes pour être efficace. 
° Boil the milk, if you use agar agar put it in the milk now, it has to boil at least 30 seconds to be efficient.
  
°Mélangez le sucre et la fécule de maïs. 
° Mix cornstarch and sugar.

°Ajoutez l’oeuf et le jaune et l’extrait de vanille, mélangez.
°Add the egg and the yolk, vanilla extract and mix well.

°Versez, en remuant, la moitié du lait bouilli.
°Pour half the boiled milk on this blend while mixing with a whisk.

°Versez ce mélange dans le reste de lait et faire cuire à feu doux sans cessez de remuer.
°Pour this mix back in the saucepan with the other half of milk, cook at middle heat without stopping whisking.

°Quand la crème commence à bouillir, cuire encore 3 minutes sans cesser de remuer au fouet. Si vous utilisez de la gélatine, essorez la bien et ajoutez la à la crème, mélangez jusqu’à totale dissolution.
°When it start to boil cook 3 more minutes, always whisking. If you use gelatine leaves drain them and add to the cream, stir until smooth.

°Ajoutez le praliné et mélangez bien au fouet.
°Add the praliné and whisk weel until smooth. 
 

°Versez dans un récipient propre 
°Pour in a clean bowl.
  
°Filmez au contact de la crème et laissez la tiédir.
°Put a shrink wrap in contact with the cream and let cool until just warm.

°Une fois la crème juste tiède, montez la crème liquide en chantilly et ajoutez la délicatement à la crème pâtissière à l’aide d’une spatule. Réservez au frais filmé.
°Once the pastry cream warm (almost cold), whipped up the whole cream and it delicately to the pastry cream, using a spatula. Put a shrink wrap and chill.

 

La pâte à choux
The choux puff pastry
 
100g de farine tamisée / 100g of sifted flour
125g d’eau / 125g of water
75g de beurre / 75g cubbed butter
2,5g de sel / 2.5g of salt
2,5g de sucre / 2.5g of sugar
3 à 4 œufs /3 to 4 eggs

°Préchauffez votre four à 180°C
°Preheat the oven at 180°C, assisted fan.
 
°Mettre l’eau, le sucre, le sel et le beurre dans la casserole.
°In a saucepan put water, sugar, salt and cubbed butter.
 
°Porter à ébullition, il faut que tout le beurre soit fondu.
°Bring to boil, butter has to be melted.
 
°Hors du feu ajouter d’un coup la farine et avec la spatule mélanger vigoureusement, ceci pour éviter la formation de grumeaux.
°Off the heat pour the flour in one time, using a spatula stir vigorously to avoid lumps to be formed.
 
°Remettre sur feu doux quelques secondes pour dessécher la pâte, ceci évite qu’elle soit trop humide et ainsi les choux seront bien creux.
°Bring back on heat for a few seconds to dry the dough, it aim to avoid it to be too wet, also the choux won’t be hollow.
 
°Débarrasser la pâte dans un cul de poule ou dans le bol du robot, en vous aidant d’une spatule ou avec le batteur plat du robot,
 ajouter les œufs un à un en mélangeant bien entre chaque pour qu’ils soient bien absorbés.
°Pour this batter in a big bowl or in the bowl of the robot, using a spatula or the flat batter of the robot and add, one by one, the eggs. Wait the dough to be smooth before adding another one.
 
°La quantité d’œufs varie, la pâte est prête lorsqu’en la touchant avec la spatule une pointe se forme à la surface. Elle tient bien, s’affaisse à peine et la pâte est brillante et lisse et ferme.
°The quantity of eggs vary, the dough is ready if when you touch it with the spatula there’s a peak that is formed on the surface. It’s firm, not liquid, not dry and it’s smooth and shiny.
 
°Dressez vos choux à la poche à douille, munie d’une douille unie, moyenne ou grosse selon si vous souhaitez réaliser un gros Paris
Brest ou, comme moi, des individuels.
°Using a pipping bag with a plain tip (medium or big, it depends if you want a big Paris Brest or individuals ones, I made individuals ones) shape the
choux.
 
°Découpez des cercles de craquelin de la taille des choux, avec un bouchon ou un emporte-pièce et déposer les sur les choux sans
trop appuyer.
°Using a cap or a cookie cutter, cut rounds in the crunchy tops dough’s, put on the tops of the choux without pressing it too much.
 
°Si vous ne souhaitez pas mettre de craquelin dorer au pinceau (œuf + 1 pincée de sel) et enfourner à four chaud 190°C. Dans ce cas
vous pouvez mettre des amandes effilées. Dans tous les cas les choux sont cuits lorsque le fond des sillons dans les craquelures est aussi coloré que
l’ensemble. Si ces sillons sont plus clairs, l’intérieur ne sera pas complètement cuit et les choux vont s’affaisser.
°If you decide not to put the crunchy top, brush the choux with an egg mixed with a pinch of salt before baking. In that case you can sprinkle with slenders almonds. In all cases the choux are bake when the depth of the crakles is as colored as the whole choux. If the bottom of this crackles are brighter, the inside of the choux is not cooked and them will collapse.
 
°Laissez les choux refroidir sur grille, à l’aide d’un couteau à pain, posez bien à plat votre main sur le dessus de la couronne de choux et coupez en deux dans la largeur. 
°Let them cold on a wire rack, then, using a bread knife, put flat your palm on the choux crown, and cut it in two in the wide.
 

 

 

Craquelin
Crunchy choux tops
50g de farine / 50g of all purpose flour

50g de cassonade / 50g of brown sugar

1 pincée de sel / 1 pinch of salt

40g de beurre doux mou /40g of very soft butter

 

°Dans le bol du robot travailler au fouet la farine, la cassonade et le sel, auxquels vous ajoutez le beurre pommade.
Travaillez plusieurs minutes jusqu’à obtenir une pâte homogène.
°In the bowl of the robot with the whisk work the flour, with brown sugar, salt and soft butter. Work it a few minutes until
smooth.
°Etalez entre 2 feuilles de papier cuisson silicone ou classique, ou du papier guitare si vous en avez, sur 4 mm  d’épaisseur environ.
Mettre au frais.
°Roll between two sheets of silicon baking paper or classic baking sheets, about 4 mm thick. Keep in the fridge.

 

 

 

Insert praliné
 
Praliné heart
 
100g praliné / 100g of praliné paste
 
40g de crème liquide entière ou 30% / 40g of whole cream

 

 °Dans le bol du robot mettre le praliné, fouetter à vitesse moyenne en versant la crème en filet, fouettez 2 minutes pour obtenir une texture épaisse ressemblant à la chantilly. Mettre dans une poche à douille et réserver au frais.
°In the bowl of the robot pour the praline, start beating at medium speed and pour slowly the cream, beat 2 more minutes to obtain a thick texture like Chantilly. Pour in a pastry bag and keep in the fridge.

 

Dressage
Assembly
°Une fois la couronne de choux coupée en deux, commencez par pocher la crème diplomate sur chaque choux de la partie du bas.
°Once the choux crown cut in two, start by poached the diplomate cream on each choux
of the bottom part.
 
°Pochez ensuite une belle noisette d’insert praline au milieu de chaque choux et recouvrir ensuite de crème diplomate et recouvrir avec le chapeau de la couronne.
°Then, poach a big tablespoon of the praliné heart in the middle of each choux, cover with diplomate cream and close it with the top of th choux crown.
 
°Décorez simplement avec du sucre glace.
°Decorate simply with icing sugar.
