Pâte brisée sucrée / Sweet pie pastry
Pour un cercle 10 p (30 cm de diamètre) ou 16 tartelettes: 
For 10 servings, a pie of 30 cm or 16 minis pies:
250g de farine tamisée / 250g flour
125g de beurre /125g butter
5g de sel / 5g salt
30g de sucre / 30g sugar
1 jaune + 0.5 dl d’eau (= 100 à 150g) / 1 yolk + 0,5dl of water (= 100 à 150g)
  
°Bien sûr vous pouvez réaliser cette pâte à la main ou au robot pâtissier.
°You can make it by hand or with a food processor.
 
°Mettre la farine dans le bol du robot, faire une fontaine et y dissoudre le sel et le sucre avec un peu d’eau.
°Put the flour in the in bowl of the kitchenaid (or one the working surface), made a fountain and dissolve in it the salt, & sugar with a small quantity of water.
 
° Ajouter le beurre en petits dés et sabler soit avec vos doigts ou avec la feuille du robot.
°Add cubed butter and use your fingers or the flat batter to obtain something sandy.
 
°Ajouter le jaune d’œuf puis l’eau petit à petit, rassembler en boule.
°Add slowly the yolk and water and gather to make a ball.
 
°Une fois la boule obtenue il faut fraiser la pâte. Appuyer votre paume sur le milieu de la boule en poussant devant soi. Rassembler, tourner la pâte d’1/4 de tour et recommencer.
°Once the ball formed, you have to knead it. Push with the palm of your hand on the middle of the dough and slide it forward. Gather the dough, turn it ¼ turn and do it again until all the dough is knead.
 

 

Cette étape a pour but d’éliminer tout morceau de beurre qui ne se serait pas incorporé correctement à la pâte, ainsi il n’y aura pas de trou
lors de la cuisson. Cela sert aussi à donner de la tenue à la pâte.
This step aim to eliminate any piece of butter that would still be in the dough. Ifit’s not well incorporated in the dough it will make holes during baking. It also aims to give the dough a better texture.
 
°Mettre la pâte en boule (ou aplatie), la filmer et laisser reposer au moins 30 min avant de vous en servir.
°Put the dough in a shrink wrap and let it in the fridge for at least 30 minutes before use.
 
 
Petits conseils: 
Small tricks :
   -Bien faire fondre le sucre et le sel avant d’incorporer le beurre
-Make sure the sugar and salt is well dissolved before incorporate butter 

-Ne pas trop pétrir la pâte sinon cela lui enlèvera sa friabilité et la rendra élastique

-Don’t overwork the dough, otherwise it will be elastic and tough, not crumbly anymore.
 
-Vous pouvez congeler cette pâte, à plat et vous n’aurez plus qu’à l’abaisser après décongélation. Ou déjà abaissée à la taille de votre choix, dans ce cas enroulez la dans du papier sulfu et filmez bien avant de congeler. Vous n’aurez plus qu’à la dérouler une fois décongelée.
-You can freeze that dough, make it flat before freezing, you’ll just have to roll it after defrost. Or roll down some disks and it will be ready to use, roll it in a baking paper before freezing and make sure it’s well wrapped. Unroll it after defrosting.
 
 
Celle-ci vous servira pour vos fonds de tartes, gâteaux sucrés, fonds de polkas, St Honorés…
It will be perfect for your pies, sweet cakes, polkas, or St Honorés…
Vous pouvez aussi la faire au chocolat, pour cela remplacer 20 à 30g de farine par du cacao non sucré.
You can also made a chocolate one, for that replace 20 to 30g of flour by unsweetened cocoa.
